We had another craft night with Rebecca and created these candy mugs for Rebecca's co-workers for Easter. Not only is Rebecca a pure delight to be around but she is a super fast learner.

Chicken Enchilada Casserole
This is a good & easy recipe to make ahead and give to a friend. She can bake it at her home. Chicken Enchilada Casserole
6 cooked & deboned chicken breasts halves
12 corn tortillas cut into 1" strips
3/4 c. salsa
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
1 medium onion, chopped finely chopped
1 lb. cheddar cheese, shredded
1 (16 oz.) container sour cream
Cut chicken into small pieces and set aside. In a large bowl combine salsa, both soups, & onions. Spread 1/2 of salsa in bottom of 9 x 13" baking dish. Place half of the tortilla strips in an even layer over salsa mixture, followed by half of the chicken, half of the remaining salsa mixture, half of the sour cream, half of the cheese. Repeat with the remaining ingredients. Cover & refrigerate overnight.
Uncover and bake 300 until heated through. About 1 hour.

Hannahlily & I made these candy mugs for her co-workers Saturday afternoon. It was fun to craft with her as we listened to old radio mystery shows on tape that she checked out from the library. There aren't a lot of green candies available. We added green gift wrap to some mini candy bars to help fill the mugs. Three green starlight mints were taped together to resemble shamrocks. The mugs, little green gliter hats, most of the ribbon, shamrock garland & the green glitter shamrocks were from Michaels.

Notes to My Daughter Box
As Hannahlily was growing up I gave her lots of notes. Some of them are kept in this box. They were always in my handwritting.

Creme de Menthe Cupcakes
Hannahlily made these delicious, mint flavored, melt in your mouth cupcakes. She made her own fudge topping instead of using the Smuckers Topping and real whip cream instead of the Cool Whip. These are better if you prepare them a little ahead of time so that the cake absorbs some of the moisture of the cream.
Creme de Menthe Cake
Add 3 T. Creme de Menthe to white cake mix that has been prepared according to directions on box. Bake in 13x9" pan as directed on cake mix box. Cool. Spread Smuckers Fudge Topping on top of cake. Mix 3 t. Creme de Menthe to a container of cool whip and spread on top of cake. Keep in refrigerator.
