Mac & Cheese with Vegetables
Hannahlily made this flavorful mac & cheese with roasted vegetables. This would make a comfort food side dish or I think you could add tuna and serve it as a main dish. Baked in a 9"x 13" pan topped with roasted plum tomatoes.
1 lb. plum tomatoes
10 oz. frozen broccoli
1 T. olive oil
2 T. butter
3 T. flour
4 c. milk, warm
2 c. grated aged Asiago cheese
2 c. grated sharp cheddar cheese
2 T. dijon mustard
1 1/2 t. salt
2 t. fresh black pepper
2 t. dried thyme
1 box penne cooked & drained (we used whole wheat)
Tip: to add crunch, sprinkle 3 T. each of grated Asiago & bread
crumbs over top of casserole before baking.
Heat oven to 400. Slice the tomatoes 1/4" thick. Toss tomatoes in olive oil and roast on parchment lined baking pan for 30 minutes. Steam broccoli keeping it slightly crisp.
Whisk the butter and flour in a pot over medium-high heat until foamy. Add the milk and whisk until thickened and bubbly, about 3 minutes. Remove from heat.
Whisk in the chesses, mustard, salt, pepper, & thyme. Stir in the pasta & broccoli. Spread in 9"x13" baking dish. Top with tomatoes & bake about 30 minutes.

Chocolate Chip - Peanut Butter Cookies
Hannahlily made these delicious cookies filled with two sizes of chocolate chips, peanut butter, & coconut. 1 c. softened butter
1 1/2 c. creamy peanut butter
2 1/2 c. firmly packed brown sugar
2 large eggs
1 egg white
1/2 c. sour cream
2 t. vanilla extract
3 1/2 c. bread flour
1 T. baking soda
1/2 t. salt
2 c. sweetened flaked coconut
2 c. semisweet chocolate chips
1 c. miniature semisweet chocolate chips
Preheat oven to 350.
Beat butter & peanut butter in a large bowl until creamy. Add brown sugar, beat until creamy. Beat in eggs, egg white, sour cream, & vanilla until combined.

In another bowl, combine flour, baking soda, & salt. Gradually add to butter mixture, beating until combined. Add coconut & chocolate chips, beating just until combined.
Drop by large ice-cream scoop onto ungreased cookie sheets. Bake for about 15 minutes until lightly brown. Cool on pan for 2 minutes before removing.
Makes 38 cookies.

Eat This Not That
This is the latest Eat This Not That book. This book has a lot of great information about foods at the Supermarket. It's easy to read with lots and lots of pictures. I am not a calorie watcher but I am concerned with nutrition. I am learning more good nutritious choices to make at the grocery store from reading this book.
