1 2/3 c. flour
2 t. baking powder
1/4 t. salt
1 t. cinnamon
1/2 c. packed brown sugar
1/2 c. buttermilk
1/3 vegetable oil
1 egg
1 t. vanilla extract
**1 c. chopped fresh or frozen peaches, thawed & drained
1/2 c. chopped pecans
In a large bowl, combine flour, cinnamon, baking powder & salt. In another bowl, combine brown sugar, buttermilk, oil, egg & vanilla. Stir into dry ingredients just until moistened. Fold in peaches & pecans. Bake at 400 in greased muffin pans for 15-18 minutes.
**I fill up a 2 c. glass measure cup with frozen peaches and set
in frig. overnight to thaw.
