Pumpkin Crisp
Pumpkin Crisp
1 (16 oz.) can pumpkin
l large (12 oz.) can evaporated milk
1 1/2 c. sugar
2 t. pumpkin pie spice
3 eggs
1 box yellow cake mix
1 c. chopped pecans
3/4 c. butter, melted
Mix the first five ingredients together & pour into a greased 9"x13" pan. Sprinkle dry cake mix on top of the mixture. Top with pecans & drizzle with butter. Bake 1 hour at 350.

Streusel Coffee Cake
Streusel Coffee Cake
1 1/2 c. graham cracker crumbs (about 21 crackers)
3/4 c. chopped pecans
3/4 c. packed brown sugar
1 1/2 t. cinnamon
2/3 c. butter, melted
1 pkg. yellow cake mix
1 c. water
1/4 c. cooking oil
3 eggs
powdered sugar icing
For streusel: Combine cracker crumbs, pecans, brown sugar and cinnamon. Stir in melted butter. Set aside.
In large mixing bowl, combine cake mix, water, oil, & eggs. Beat on low speed until moistened. Beat on medium speed for 1 1/2 minutes. Pour half of the batter into a greased 13x9x2" baking pan. Sprinkle with half of the streusel mix. Carefully spread remaining batter over streusel; sprinkle with remaining streusel mix. Bake in 350 oven for 35- 40 minutes until toothpick comes out clean. Cool slightly; drizzle with Powdered Sugar Icing

Kate's Fall Treats
Kate gave us this great recipe. Thank you Kate! For fun I used mini spring form pans & fall leaf cookie cutters. These are so good, they won't last long! Kate's Fall Treats
1 c. dried Craisins (can chop)
1/4 c currents or golden raisins
1/2 c. coconut
5-6 c. Rice Krispies
1 c. Corn Flakes
16 oz. marshmallows
1 1/2 c peanut butter
1/2 c. honey
1/2 c. wheat germ
3/4 c. chopped nuts
Melt honey, marshmallows & peanut butter-takes about 2 minutes. Add other ingredients with wheat germ & cereals last. Knead to mix. Press into 1/2" thick edged cookie sheet. Cut into bars.
