Thank You Mini Scrapbook

I wanted to thank Hannahlily for making Mother's Day so special for me so I created this mini scrapbook. I used a Stampin Up scrapbook kit and Accucut dies. These are some of the pages in the scrapbook. I put a copy of the hand drawn card she made for me on the cover

We love reading about Tasha Tudor's simple life. She gave me some of her books and a DVD with Tasha Tudor showing her garden & Corgi Cottage.

Breakfast was a pot of tea, Mango Lassi, and Quinoa Hazelnut Scones. Mango Lassi had fresh mangos.


Quinoa Scones had fresh ground quinoa flour.




Brunch was Asparagus Whole Wheat Bread Pudding.


The recipes were copied and attached to tags that went in pockets behind the pictures. I wrote on the back of the tags thank you notes. I used my own handwriting. I have awful handwriting but I kept in mind how I treasure anything that was written to me in my parents own handwriting.




Later that day we had a campfire in the back yard. She made chili with soy dogs on whole wheat bread, foil packets of zuccini & squash, and foil packets of potatoes & carrots.






Banana boats with chocolate chips and homemade coconut marshmallows were wrapped in foil and heated.








Of course I had to include Henry.

Grain Basket

A friend asked me about baking with grains and recipes so I made this basket for him with healthy items.Quinoa, whole wheat, organic green tea, organic low sugar preserves, Braggs liquid aminos.
This book has been a great reference book for me for years. A copy was included in his basket.

Memorial Day

Banana Oatmeal Muffins


Banana Oatmeal Muffins

1 c. rolled oats
1 c. boiling water
3-4 ripe bananas, mashed
2 eggs, beaten
1 c. brown sugar
1/2 c. vegetable oil
1 c. buttermilk
3 c. flour*
2 1/2 t. baking soda
1/2 t. salt
1 t. vanilla
1 t. cinnamon
1 c. broken walnuts
Pour water over oats in a bowl, set aside to cool. Mix eggs, brown sugar, oil, vanilla, buttermilk, & bananas. Stir in rolled oats. In a separate bowl combine flour, baking soda, salt & cinnamon. Add to banana mixture. Stir in nuts. Bake at 375 for 15-20 minutes. Makes about 12 jumbo muffins.
*I like to use fresh ground whole wheat flour
