Sweetheart Stroganoff

This is so easy and quick to prepare. I used whole wheat noodles, a healthy tomato soup, & substituded vegetarian protein for the meat and nonfat yogurt for the sour cream. 1 Onion, chopped
1/4 c. chopped green peppers
1 lb. ground beef
1 can tomato soup
1 c. sour cream
8 oz. noodles
Parmesan cheese
Brown onion in small amount of oil. Add the green peppers & ground beef. Cook until meat is browned. Mix the tomato soup & sour cream together, add to meat mixture. Top with parmesan cheese.

Kashi Cranberry Treats

These easy & quick treats are similar to Rice Crispy Treats. The Kashi GOLEAN Crunch cereal is a protein & high fiber cereal. The tartness of the cranberries and the sweetness of the treats is a nice combination. I used 6 mini spring form pans instead of the 9x13" pan. One was a mini heart shape with sprinkles as a surprise for Hannahlily. These make a nice gift in a cello bag with a pretty ribbon.
3 T. butter
1 (10.5 oz.) bag miniature marshmallows
1 (15 oz.) box Kashi GOLEAN Crunch! cereal
1 1/4 c. dried cranberries, divided
Vegetable cooking spray
1- Melt butter in large pot over low heat. Add marshmallows and cook stirring constantly until melted & smooth. Remove from heat.
2- Stir in cereal & 1 c. dried cranberries until well coated.
3- Press mixture into 13x9" pan coated with baking spray. Chop remaining 1/4 c. dried cranberries and sprinkle on top. Cut into bars when firm.

Carrot Muffins

This is a very healthy high fiber, low fat muffin recipe. I use fresh ground whole wheat flour and bake them in jumbo muffins pans. They store well in the freezer.
1 c. whole wheat flour
1 c. old fashioned rolled oats
1 1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 t. cinnamon
dash of ginger, cloves & nutmeg
1/3 c. plain nonfat yogurt
1 egg
2 T. canola oil
1/2 c. brown sugar
**1/2 c. crushed pineapple in unsweetened juice
2 t. vanilla extract
1 1/2 c. shredded carrots (about 3)
1/2 c. raisins
In a large bowl, stir together flour, oats, baking powder, baking soda, salt, cinnamon, ginger, cloves & nutmeg. In a separate bowl, stir together pineapple, yogurt, egg, oil & vanilla. Stir in brown sugar until blended. Make well in center of dry ingredients, add pineapple mixture & stir just to combine. Stir in carrots & raisins.
Bake in greased muffin pans at 400 for about 18 minutes. Makes 6 jumbo muffins.

(**I double the recipe and use the whole can of crushed pineapple.)

Grilled Tuna with Olive Tapenade

Hannahlily made these delicious tuna sandwiches.


An indoor speed grill makes grilling easy & quick.


Olive Tapenade




1/3 c. pitted green olives
1/4 c. kalamata olives
1 T. drained capers
1 T. plus 2 t. extra-virgin olive oil
1 T. fresh lemon juice
1 T. chopped fresh parsley
1 t. lemon zest
1 anchovy, minced
freshly ground black pepper
1/3 c mayonnaise
2 T. dijon mustard
1 (12-14 oz.) tuna steak
4 ciabatta buns
fresh spinach
4 thin slices of red onion
1/2 c. purchased roasted red peppers, drained
For Tapenade: Combine both type olives, capers, 1 T. oil, lemon juice, parsley, lemon zest, & anchovy in food processor. Pulse until olives are just chopped. Season with pepper.
Stir the mayo & mustard in separate small bowl to blend.
Brush the tuna steak lightly with 2 t. oil. Sprinkle with salt & pepper. Grill the tuna until golden on the outside and just opaque in the center, about 2 minutes per side. Grill cut ciabatta buns cut side down until lightly toasted, about 2 minutes.
Spread mayo mixture over bottom and top halves of the ciabatta. Arrange a layer of spinach & red onion on bottom halves. Cut the tuna steaks into 1/2" slices and arrange over the onion. Spoon tapenade over tuna. Top with red peppers then ciabatta tops.

Chocolate Popcorn

Hannahlily made this chocolate popcorn
Milk Chocolate Popcorn
12 c. popped popcorn
2 1/2 c salted peanuts
1 2/3 c milk chocolate chips
1 c. corn syrup
1/4 c. butter
1- Grease large roasting pan.
2- Combine popcorn & nuts in prepared roasting pan.
3- Combine morsels, corn syrup & butter in medium heavy-duty saucepan.
4- Cook over medium heat, stirring constantly, until mixture boils.
5- Pour over popcorn & toss well to coat.
6- Bake in 350 oven stirring frequently for 30-40 minutes.
7- Loosen popcorn from pan & allow to cook slightly in pan.
8- Remove to a wax paper lined cookie sheet to cool completely.
**She drizzled melted white chocolate on top of cooled popcorn.

Chocolate Covered Pretzels

Hannahlily made these chocolate covered pretzels She made the chocolate bag.
The pretzels in cello bags ready to give.



The chocolate bag was made with a die cut bag made from freezer wrap. The shiny side of the wrap is on the inside of the paper bag. Paint the inside with several coats of melted chocolate. After the chocolate has set up, remove the paper bag.
The broken pretzel rods made cute little ones.



The Wilton Chocolate Pro pot made it easy to melt the chocolate melts.

Country Style Chicken Kiev

Hannahlily made this Country Style Chicken Kiev. This recipe has the same flavors as traditional Chicken Kiev with a lot less time and work involved. Country Style Chicken Kiev
1/2 c. butter
1/2 c. Pepperidge Farm herb seasoned stuffing
2 T. grated parmesan cheese
1 t. dried basil leaves
1 t. dried oregano leaves
1/2 t. garlic salt
2 skinned chicken breasts, split
1 T. chopped parsley
1-In a 2 qt. saucepan melt butter.
2-Meanwhile crumble stuffing mix into pie dish.
3-Combine crumbs, cheese, basil, oregano, & garlic salt.
4-Dip chicken in the melted butter, then roll in crumb mixture to coat. Put in 9" baking pan. Add parsley to remaining melted butter and pour over chicken.
5-Bake at 375 for about 50-60 minutes until chicken is cooked through.

Greek Spinach Melts

Greek Spinach Melts
1 pkg. (l11 oz.) frozen chopped spinach, thawed & drained
1 plum tomato, seeded & chopped
1/4 c. onion, chopped
1 garlic clove, pressed
1/2 c. crumbled feta cheese
1/4 c. mayonnaise
1/4 c. sour cream
1/2 t. dried dill weed
1/4 t. salt
1 pkg. Pepperidge Farm Party Bread
Combine all ingredients except Party Bread in a bowl. Top Party Bread with spinach mixture on cookie sheet. Bake at 375 for about 10 minutes until heated through.
**I wanted to make this healthier so I used homemade fresh ground whole wheat bread cut with circle cutters instead of the Party Bread. I substituted 1/2 c. Stonyfield Farm organic nonfat plain yogurt for the mayonnaise & sour cream.

Apple Bee's Blonde Brownie

Hannahlily made these blonde brownies. They are out of this world good! A scoop of premium vanilla ice cream on top is a must!

Brownies
2 c. sifted flour
1 t. baking powder
1/4 t. baking soda
1/4 t. salt
2/3 c. butter
2 c. brown sugar
2 eggs, beaten
2 T. vanilla
1 c. chopped walnuts
1 c. white chocolate chips
1- Combine flour, baking powder, baking soda & salt.
2- Melt butter, add brown sugar, eggs & vanilla. Mix well.
3- Gradually combine with flour mixture.
4- Stir in nuts & chips.
5- Pour into 9x13" pan. Bake at 350 for about 30 minutes.
Sauce
1/2 c. maple syrup
1/4 c. butter
1/2 c. brown sugar
8 oz. cream cheese, softened
1/2 t. maple extract or maple flavoring
1- Combine syrup & butter, cook over low heat until butter is melted.
2- Stir in brown sugar until dissolved. Remove from heat.
3- Beat in cream cheese & maple extract until smooth.
4- Heat in microwave if too thick. Store in refrigerator.
