Jerretts Farm Apples

Jerretts Farm on Roan Mountain has a variety of fresh picked apples. Take 143 towards Roan Mtn. State Park, keep going past the visitors center, past the pool, just past Jack's Store turn left on Burbank Road. Go one mile, turn right on Jess Jarrett Road. There are signs at the turns.
You will be greeted with friendly people who are happy to let you sample any apples and will help you choose the variety that will suit your wants. Not only will you get delicious fresh apples at a great price you will be helping local farmers. They should have apples until about mid November. They are not open on Sundays.

There are some pretty places to picnic on Roan Mountain.
Apple Filling in a jar makes a nice gift. You could also pair it with frozen pie dough if you like.

Apple Crisp

Apple Crisp
3 lbs. baking apples, peeled & sliced
1/2 c. flour
1/2 c. oatmeal
1 c. brown sugar
1/2 c. butter
1/2 t. salt
1 t. cinnamon
Layer apples in baking dish. Mix remaining ingredients and sprinkle on top of apples. Bake at 375 degrees for about 30 minutes or until apples are soft.
Healthier Apple Crisp
12 apples, peeled and sliced
1 cup fresh ground white wheat flour
1 c. old fashioned oats
1 c. dark brown sugar
2 t. cinnamon
1/2 t. salt
3/4 c. butter
Layer apples in a large baking dish. Mix remaining ingredients and sprinkle of top of apples. Bake 45-60 minutes until apples are soft.

Chocolate Pie Desert

Hannahlily made this Chocolate Pie Desert with Vikki's sweet daughters Amanda & Kaitlyn. Chocolate Pie Desert

1/2 c. flour
1 1/2 c. chopped pecans
1 1/2 sticks melted butter
Mix together and pat down in 9x13" baking dish. Bake at 320 for 20 minutes
then cool completely.
Mix together and pour on top of baked crust:
2 (3oz.) pkg. cream cheese softened
1 c. whipped topping
1 c. powdered sugar
Mix together then pour on top of cream cheese mixture:
2 pkg. chocolate instant pudding
1 pkg. vanilla instant pudding
4 1/2 c milk
Top with 1 container whipped topping

Tieriffic Skirt


Hannahlily made this fun, cute skirt from mens ties. She cut 14 ties and attached them to a purchased skirt with a 3" stretch waistband. She said the secret to get the ties to lie flat is to put a pleat in them.

Quinoa Scones

Hannahlily made these delicious nutritious scones. Quinoa is often referred to as a super grain. It is an ancient grain that was called the "gold of the Inca's". It is high in protein (complete protein). Also is is a great source of manganese, iron, copper & phosphorus. If you suffer with migraine headaches, diabetes or atherosclerosis you should consider adding this to your diet. There are too many health benefits of quinoa to list them all here.
I simmered frozen strawberries and added Agave syrup to make a fruit spread.
Quinoa Scones
1 1/4 c whole wheat pastry flour
**3/4 c. quinoa flour
1/4 c. sugar
2 t. baking powder
1/2 t. salt
1/2 t. cinnamon
6 T. unsalted butter, chilled & diced
3/4 c. almonds, toasted & coarsely chopped
2/3 c. whole milk
1/2 c. dried cranberries
1 egg
milk or melted butter for glazing
In a large bowl, whisk together the flours, sugar, baking powder, salt & cinnamon. Cut in the butter until mixture resembles coarse crumbs, then stir in almonds & dried cranberries.
Beat the milk & egg together & stir the dry ingredients into the milk mixture until it forms a dough.
Turn the dough out onto lightly floured surface & knead 7-8 times. Pat the dough into 1/2 " thick round, brush with milk or melted butter, & cut into 8 wedges. Sprinkle with cinnamon & sugar.
Place the scones on sprayed baking sheet and bake at 400 degrees for about 20 minutes until tester comes out clean.
**Quinoa is processed in food processor to make flour.
