Lentil Soup

This is a very easy, quick, nutritious, inexpensive soup. It is one of our favorites. The soup in the picture has a dollop of nonfat yogurt.
1 bag lentils (rinse & pick through)
1 large onion, chopped
2 quarts water
1 c. celery, chopped
3 carrots, chopped
1 can (26 oz.) Chunky Vegetable spaghetti sauce
Cook for about 2 hours until lentils are soft.

Carrots also are a great source of fiber, vitamin C, vitamin k, folate & manganese, & a good source of vitamin B6, iron, & potassium. You get the best benefit if you eat carrots raw. A bag of organic carrots is only about one dollar. They are great to keep in the refrigerator and grab when you want a snack.
(When I took Hannahlily for her baby exam about 22 years ago her doctor took one look at my orange baby and said "You're feeding her too many carrots!" )

Hi Rebecca! A bag of lentils is about one dollar. You can just use 1 lb. of your bulk lentils to equal a bag. Take Care!
