Mini Peach Tarts

These personal size peach tarts that Hannahlily made were the best peach pies I have ever had. She got the peaches at the Farmers Market before going to work and baked the tarts that evening. She used her favorite pie crust recipe, the peach filling below and topped the tart off with a lattice trim.
Peach Pie Filling
5 oz sugar
1/2 oz tapioca
1 oz flour
1/2 t salt
1/2 t nutmeg
1/2 t cinnamon
1/2 oz lemon juice
1 oz butter, melted
1.5 lbs peaches (about 3 large)
peel the peaches (cut an x in the skin of each of the peaches - bring a saucepan of water to a boil . Drop the peaches in for a couple minutes until the skin loosens then immediately plop them in a bowl of ice water. Once they are cool enough to touch, peel the skin off, starting at the x you cut in the skin. )
Combine all the ingredients except the peaches and mix thoroughly. add the peaches and toss.

She baked the tarts in these dishes and then slipped them out to serve them.
