Southwest Tabouleh Salad

If you like southwestern flavor you might like this make ahead salad that is low calorie & loaded with nutrition. A great dish to take for lunch. We get the bulgar in the bulk section at Earth Fare.
Southwest Tabbouleh Salad
1 c. uncooked bulgar
1 c. boiling vegetable stock
2 chopped tomatoes
1/4 c. chopped sweet red onion
1/2 red pepper, chopped
1 (15 oz.) can black beans, drain & rinsed
1/4 c. chopped cilantro
1/2 t. grated lime rind
juice of one lime
2 T. olive oil
3 T. apple cider vinegar
1/2 t. ground cumin
1 c. frozen corn, thawed
1/4 t. salt
Bring vegetable stock to boil in sauce pan. Turn off heat and stir in bulgar. Cover & let stand for 30 minutes. Place bulgar in desired dish. Add remaining ingredients. Toss gently. Cover and chill over night.
