Hummus is high in protein, fiber, iron & vitamin C. It is so easy to make in a food processor. It can be stored in the refrigerator and used as a dip, sandwich spread or in salads. Place in food processor:
3 cans organic chic peas, drained
4 T. olive oil
1/2 c. tahini
juice of 2-3 lemons
2 garlic cloves
Pulse until ingredients are just mixed but not smooth. Through the tube add about 3 T. water until desired smoothness. Do not overmix.
You may like to add salt to taste.
